Biltong recipe

I’m tempted to try this recipe for South African biltong (beef jerky) with the flat iron steak in the fridge.
LATER: I’ve vinegared, salted, and coriandered it (plus some onion powder, black pepper, cayenne pepper, and salt) and left it on top of the stove with the other things we’re cooking for Easter. Sampling it just now that coriander seed beef is pretty spicy and yummy.
